This time it is thanks to intuition and once again we are talking about the most rooted white berry variety in the territory of Marsala: the Grillo. In 1990 with the wine Grappoli del Grillo, De Bartoli wanted to experiment the yield of these grapes for a different destination: no longer just Marsala, but white table wine.
At the beginning of September the grapes are harvested and selected by hand, followed by pressing from which the must is obtained. The fermentation is carried out by indigenous yeasts and takes place at controlled temperature in steel tanks and then continues in French oak barrels for 12 months. This wine ages very well, so much so that the winery recommends that you try it after 10 years of bottle ageing.
Grappoli del Grillo is structured, full-bodied and long-lived, and is best expressed alongside equally important dishes. Serve at 12/14 °C.
