Integer Zibibbo 2018 is a white wine born on the island of Pantelleria on volcanic soil from Zibibbo grapes, a traditional and rustic wine with an ancient taste. The harvest takes place in the month of October, it is late and from this the process of pressing and spontaneous fermentation with maceration on the skins begins. The fermentation of the Integer Zibibbo 2018 takes place in oak barrels and lasts ten days, without fulling or pumping over. Two types of fermentation take place: the alcoholic one is triggered spontaneously by the action of indigenous yeasts, and the malolactic one in which malic acid is converted into the delicate lactic acid, essential to ensure the biological stability of the wine. Aging is necessary for at least ten months. Integer Zibibbo has a golden yellow colour with slight orange and amber nuances. The nose offers a bouquet full of aromas: tropical fruit, ripe yellow fruit and hints of candied citrus fruits. In the mouth it expresses all its personality, a wine rich in sensations, taste, able to surprise with its freshness.
